Preparation: Season the trout with salt and pepper, inside and out. Wrap with bacon. Lubricate the foil with oil to prevent sticking. Then wrap it around the fish. Preparation: Dice onion and sauté with some oil until translucent. Thinly dice or slice tomatoes and lemons. Husk the corn carefully and remove the cob, leaving the husk in tact. Remove the silk. Put husk aside. Add tomatoes and spices to the pan with the onions and cook. Now take the husk and lay the fish on top of it. Stuff the fish with the onions, tomatoes, and lemon. Use heavy twine or string to fasten the husks around the fish, maybe the husks themselves can be used as string (if they are wet enough). Lay them on the grill or hot coals and cool until done!
Hillbilly Fish in Tin Foil Packet![]() Ingredients:

Preparation: Clean, gut, and scale your fish, but otherwise leave it whole. Slice up the veggies. Wrap the fish, along with the veggies and spices in foil. Place a liberal amount of salad dressing on the fish and veggies. Italian is best, but Ranch, Raspberry, or just about any flavor will do. You really can’t go wrong. Close the foil tightly so no steam escapes during cooking. Place on medium heat grill or on coals. Cook gently until potatoes and carrots are cooked. The salad dressing will help steam the veggies and add an extra flavor to the fish.
Hillbilly Fish, Take 2![]() This recipe is the same as the original Hillbilly Fish Wrap, except that this one uses Gardetto’s Snack Mix instead of the veggies. Ingredients:

Preparation: Clean, gut, and scale your fish. Remove the head, fins, and tail, but leave body intact. Lightly season as desired (butter, Italian dressing, or basil/dill work good). Stuff Gardetto’s into the body cavity and wrap with foil. Cook on medium heat grill or on coals. The Gardetto’s will turn into a spiced stuffing mix. |
